The story of bringing our Norwegian salmon to the U.S.
With Erik McCoy leading the way, our family-owned company is ready to grow across the Atlantic - on our terms.
When Erik McCoy talks about Mathias Bjørge, he doesn't lead with product specs or pricing. He talks about values.
- I joined Mathias because they represent what I value in a business: family ownership, long-term thinking, and a clear commitment to quality. They've built a reputation for consistency and integrity in the seafood industry, and I wanted to be part of that, he says.
A new chapter rooted in tradition
Our company's expansion into the United States isn't about rapid growth; it's about the right growth, with partners who value consistency, flexibility, and a transparent supply chain.
- I think the U.S. market is ready for this. Import volumes from Norway continue to grow, and customers are looking for trusted producers, not just traders, Erik says.
What makes Norwegian salmon different
What makes the Norwegian salmon so popular, you may ask. The answer lies in the cold, clear waters, creating the perfect conditions for the Norwegian salmon to grow slowly, develop a firm texture, and a delicious taste.
In addition, Norway is known for extensive experience in aquaculture. Combined with strict regulations, we can offer responsibly produced, safe and healthy salmon.

Mathias is unique
One of the biggest advantages, Erik explains, is Mathias Bjørge's direct access to the source.
- We're not a middleman. We're the producer. Also, our team is small, but we're all in. That gives customers a level of responsiveness and clarity that's rare, he says.
The company is also investing in new processing technology that supports exact customer specs, something that's often difficult to guarantee in large-scale operations.
- The new facility in Norway is designed to scan every piece of salmon, identify any defect, and sort accordingly, Erik explains.
- That removes the subjectivity that often comes from human inspection and ensures a consistent product, batch after batch.
What's on Offer?
The U.S. launch includes a wide range of frozen and fresh Norwegian salmon products, including:
- IVP fillets and portions (4, 6, 8 oz - skin on/off)
- Frozen chain pack portions
- Ready-to-eat cuts for sushi concepts
- Breathable film solutions for meal kits and retail
- Fresh fillets and whole HOG salmon
- Custom specs and private label options
Building long-lasting relationships
So far, the feedback from U.S. customers has been enthusiastic.
- People are really curious about the company and excited about the new facility. When we've sent samples, we've received great feedback, it's a strong signal that our focus on quality is coming through, says Erik.
Erik's day-to-day is focused on laying the groundwork. Building logistics partnerships, nurturing customer conversations, and making sure the Mathias Bjørge name gains a foothold in the U.S.
What's next?
- Over the next 6-12 months, I see this business scaling significantly. The response has been positive, and we're in a strong position to serve both high-volume buyers and niche partners who want something special, Erik tells us.
While the company may be new to the U.S., it's not new to seafood. And with people like Erik helping carry our story across the Atlantic, it's clear: tradition really does taste better.
