Ling can grow up to 180 cm long and weigh 35 kilos. It is normally found at depths of 300-400 metres above the rocky seabed.
Mathias Salted and Dried Ling has a white, tasty flesh. The flavour resembles cod, and the texture is somewhat firmer than other salted and dried fish products. Mathias Salted and Dried Ling is a versatile product and, like other dried and salted fish products, it can be used in a multitude of dishes.
Salted and dried fish can be frozen after soaking without affecting its taste or quality.
Processing
The fish is gutted and split and then matured to provide a rich and balanced flavour. The fish is then dried for 3 to 5 days depending on the size. After drying, the fish is stored at 0-4°C. The product receives a final inspection by our experienced workers before being packed and sold. Salt is the only additive in the product - no chemicals are added.
